So, I thought I would do a quick post today. Sometimes I'll share a link (like today) and other times I'll write out the recipe. This recipe is a great one for a night when you don't have much time. There are lots of ways that you can change things up - different kind of beans, add other veggies, different kind of cheese, whole wheat tortillas. The green chilies are awesome though, don't leave them out! :)

I know some of you wanted some non bean recipes, and don't worry, they're coming! Also, most of the recipes that I post won't be ready made/store bought. However, it's good to start thinking of ways to do quick healthy meals even with a lot of prepackaged ingredients.
