Hi everyone!
I'm Aubrey, and I live in San Antonio, where we have four seasons - Summer, after Summer, Winter (glorified fall really) and almost Summer. I have a fabulous husband, Kevin, and two kids, Tommy, 2 1/2, and Grace, almost 3 months. I bet you can guess why I'm interested in doing this challenge now! I still have that pesky baby weight to get off! Although I do have a general weight that I want to get to, I try not to think of it in terms of weight, but how I feel and look in my clothes. I'm trying to get back to that elusive pair of jeans that fit me beautifully in college and the first few months of marriage. (luckily those jeans are stretch, haha) :) My larger goal for this year is to fit back into those jeans by July first. I think that this challenge is an awesome way to start losing the chub!
About two years ago, my husband and I decided to start switching over to a vegetarian lifestyle. We moved into our house a few months after that decision and I have never bought and cooked meat in this house (although we have had it a few times, leftovers from eating out - we still ate meat on occasion in restaurants, and buying cooked meat a few times for guests). Four servings a day of fruits and veggies won't be a hard part of this challenge for me, but it would have been a lot harder for me 2 years ago. Making the lifestyle change was hard - I didn't know how to cook hearty meals that didn't contain meat! I know that a lot of people these days are trying to incorporate more meatless meals, for budget or health reasons. I would like to offer myself as a resource on this blog if anyone is interested. Make a comment on this post if you would like for me to post one or two recipes a week that my family has come to love.
I'm excited to get started on this challenge to strengthen my body and spirit. I'm excited to get to know you all better. Let the games begin!

I am very interested in your recipes. We like our meat, to be sure, but it IS expensive so we end up eating a lot of beans and such. It's good and pretty filling, but I'm a little bored with my rotation of 15 or so dishes. So, I would love more ideas you have!!

ReplyDeleteI am also interested in those recipes! Eating on a budget is severely hindered for us because of the meat-buying factor. My hubby is also not overly fond of beans (eating them daily for 2 years in Mexico will do that to you though, I guess. Even 10 years later) so my "meatless meals" are not always a success. Bring on the recipes! Thanks for the offer!
